🍽️ Grilled Couscous Tomatoes

Ingredients
- salt
- 2 tbsp olive oil
- 200 g instant couscous
- 50 g pine nuts
- 0.5 bunch parsley
- 1 bunch spring onions
- 30 g sultanas
- 1 tsp paprika powder hot
- 1 tsp cinnamon
- pepper
- 1200 g tomatoes (6 tomatoes)
Instructions
- 1. Bring 250 milliliters of salted water together with the oil to a boil in a pot.
- 2. Remove the pot from the heat and pour in the couscous.
- 3. Stir the mixture briefly.
- 4. Cover the pot and let the couscous swell for five minutes.
- 5. Transfer the couscous into a bowl.
- 6. Fluff the grains with a fork.
- 7. Roast the pine nuts in a pan without additional fat.
- 8. Wash the parsley and shake it dry.
- 9. Finely chop the parsley leaves.
- 10. Clean the spring onions and wash them.
- 11. Slice the spring onions into thin rounds.
- 12. Mix the couscous with the roasted pine nuts.
- 13. Add the chopped parsley and the spring onions.
- 14. Fold in the sultanas.
- 15. Sprinkle paprika powder and cinnamon over the couscous.
- 16. Season the mixture with salt and pepper.
- 17. Wash the tomatoes thoroughly.
- 18. Cut off a lid from each tomato.
- 19. Scrape out the seeds with a tablespoon.
- 20. Season the inside of the tomatoes with salt and pepper.
- 21. Fill the tomatoes with the couscous mixture.
- 22. Place the cut-off lids back onto the tomatoes.
- 23. Place the stuffed tomatoes on a lightly oiled grill tray.
- 24. Grill the tomatoes on a medium-hot grill.
- 25. Grill them for ten minutes.
- 26. Cover the tomatoes with a metal bowl while grilling.
- 27. Alternatively, you can cook them under a closed kettle grill.
