🍽️ Honey-Sesame Carrots

Ingredients
- 1 kg carrots
- 3 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tbsp honey
- 4 tbsp grape seed oil
- salt
- 2 tbsp sesame seeds
- mint (for garnish)
Instructions
- 1. Peel the carrots, but leave a small piece of the green tops attached.
- 2. Bring water with salt to a boil.
- 3. Cook the carrots in it for about 5 minutes until they are tender-crisp.
- 4. Immediately shock the carrots with cold water to stop the cooking process.
- 5. Let the carrots drain well.
- 6. Toast the sesame seeds in a pan without adding extra oil.
- 7. Let the toasted sesame seeds cool down briefly.
- 8. Mix the sesame seeds with vinegar, grape seed oil, lemon juice, and honey to make a dressing.
- 9. Season the dressing with salt to finish.
- 10. Drizzle the dressing evenly over the carrots.
- 11. Garnish the dish with fresh mint.
- 12. Serve the carrots now.
