  2. 2. Bring water with salt to a boil.
  3. 3. Cook the carrots in it for about 5 minutes until they are tender-crisp.
  4. 4. Immediately shock the carrots with cold water to stop the cooking process.
  5. 5. Let the carrots drain well.
  6. 6. Toast the sesame seeds in a pan without adding extra oil.
  7. 7. Let the toasted sesame seeds cool down briefly.
  8. 8. Mix the sesame seeds with vinegar, grape seed oil, lemon juice, and honey to make a dressing.
  9. 9. Season the dressing with salt to finish.
  10. 10. Drizzle the dressing evenly over the carrots.
  11. 11. Garnish the dish with fresh mint.
  12. 12. Serve the carrots now.
