  1. 1. Preheat your oven to 200 degrees Celsius. Set the function to top and bottom heat.
  2. 2. Rinse the parsley under running water. Shake off excess water and chop it very finely.
  3. 3. Peel the garlic clove and chop it finely as well.
  4. 4. Wash the lemons under hot water and dry them.
  5. 5. Grate the zest of one lemon finely over the chopped parsley.
  6. 6. Squeeze the juice from this lemon.
  7. 7. Slice the remaining lemon into thin rounds.
  8. 8. Take the capers out of the pack.
  9. 9. Add the capers to the garlic and chili flakes.
  10. 10. Mix everything well with the parsley mixture.
  11. 11. Grease a large ovenproof dish or baking tray with two tablespoons of oil.
  12. 12. Wash the salmon fillets and pat them dry with kitchen paper.
  13. 13. Place one fillet skin-side down in the dish.
  14. 14. Season it with salt and pepper.
  15. 15. Drizzle with some lemon juice.
  16. 16. Spread half of the herb mixture over the fillet.
  17. 17. Reserve about one tablespoon of the filling.
  18. 18. Place the second fillet skin-side up on top.
  19. 19. Season this one with salt, pepper, and lemon juice as well.
  20. 20. Place the lemon slices on top.
  21. 21. Rub the salmon with the remaining herb mixture.
  22. 22. Drizzle with the remaining oil.
  23. 23. Bake the salmon for about 25 minutes in the oven.
  24. 24. Serve the stuffed salmon on a platter.
  25. 25. Serve with rice or boiled potatoes.
