🍽️ Salmon in a Herb Comfort Wrap

Ingredients
- 3 handfuls parsley
- 4 garlic cloves
- 2 unwaxed lemons
- 4 tbsp small capers
- 1 pinch chili flakes
- 4 tbsp olive oil
- 2 whole salmon fillets à approx. 800 g (ready for cooking, deboned)
- coarse sea salt
- pepper (from the mill)
Instructions
- 1. Preheat your oven to 200 degrees Celsius. Set the function to top and bottom heat.
- 2. Rinse the parsley under running water. Shake off excess water and chop it very finely.
- 3. Peel the garlic clove and chop it finely as well.
- 4. Wash the lemons under hot water and dry them.
- 5. Grate the zest of one lemon finely over the chopped parsley.
- 6. Squeeze the juice from this lemon.
- 7. Slice the remaining lemon into thin rounds.
- 8. Take the capers out of the pack.
- 9. Add the capers to the garlic and chili flakes.
- 10. Mix everything well with the parsley mixture.
- 11. Grease a large ovenproof dish or baking tray with two tablespoons of oil.
- 12. Wash the salmon fillets and pat them dry with kitchen paper.
- 13. Place one fillet skin-side down in the dish.
- 14. Season it with salt and pepper.
- 15. Drizzle with some lemon juice.
- 16. Spread half of the herb mixture over the fillet.
- 17. Reserve about one tablespoon of the filling.
- 18. Place the second fillet skin-side up on top.
- 19. Season this one with salt, pepper, and lemon juice as well.
- 20. Place the lemon slices on top.
- 21. Rub the salmon with the remaining herb mixture.
- 22. Drizzle with the remaining oil.
- 23. Bake the salmon for about 25 minutes in the oven.
- 24. Serve the stuffed salmon on a platter.
- 25. Serve with rice or boiled potatoes.
