🍽️ Lamb roll stuffed with plums and pine nuts

Ingredients
- 1 kg lamb roll roast (with rind)
- 30 g pine nuts
- 250 g yellow plums
- 1 sprig sage
- 1 tbsp honey
- 1 tsp lemon juice
- salt
- pepper
- 2 tbsp olive oil
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Set the heating function to top and bottom heat.
- 2. Rinse the lamb meat under running water. Pat it completely dry with a kitchen towel. Lay the meat flat.
- 3. Put the pine nuts into a dry pan. Roast them without additional fat until golden brown. Remove the nuts from the pan and let them cool down.
- 4. Wash the plums and remove the pits. Cut the fruit flesh into small pieces.
- 5. Rinse the sage leaves. Shake them dry and pick the leaves off the stems.
- 6. Mix the plum pieces, the cooled pine nuts, and the sage leaves in a bowl. Stir in the honey. Season the mixture with lemon juice, salt, and pepper.
- 7. Spread the filling evenly over the laid-out lamb meat. Roll the meat up tightly.
- 8. Tie the lamb roll securely with kitchen twine at several points to help it keep its shape.
- 9. Season the outside of the roll generously with salt and pepper.
- 10. Heat oil in a large pan. Sear the lamb roll on all sides until brown.
- 11. Place the seared roll on a baking sheet. Put it in the preheated oven to finish cooking. Turn the roll occasionally during the cooking time.
