  2. 2. Cut the Brie cheese into small cubes.
  3. 3. Cut the bell pepper into thin strips.
  4. 4. Thoroughly wash the watercress under cold water.
  5. 5. Pluck the small leaves off the tough stems.
  6. 6. Fill the bread pocket with the cheese cubes, pepper strips, and watercress leaves.
  7. 7. Season the filling lightly with salt and black pepper.
  8. 8. Turn your oven grill to the highest setting.
  9. 9. Place the toast on a rack or a baking sheet.
  10. 10. Grill the toast for about 2 to 3 minutes until the cheese melts.
  11. 11. Turn the toast over and grill the other side for another 2 to 3 minutes.
