  1. 1. Place the zander fillet between two layers of cling film.
  2. 2. Gently pound the fish flat using a meat mallet or a heavy pot.
  3. 3. Cut a piece of aluminum foil and spread it thinly with butter.
  4. 4. Place the flattened zander fillet onto the buttered foil.
  5. 5. Drizzle lemon juice over the fish.
  6. 6. Season the fish with a pinch of salt.
  7. 7. Peel the carrot.
  8. 8. Slice the carrot lengthwise into paper-thin strips.
  9. 9. Distribute the carrot strips evenly over the fish fillet.
  10. 10. Mix the quark in a bowl with the egg yolks.
  11. 11. Add the chopped herbs and breadcrumbs to the quark mixture.
  12. 12. Stir the ingredients together until you have a homogeneous mixture.
  13. 13. Spread the quark mixture evenly over the carrot strips.
  14. 14. Roll the fish tightly with the filling.
  15. 15. Twist the ends of the aluminum foil tightly to seal the roll.
  16. 16. Place the fish roll into a steamer insert.
  17. 17. Fill a suitable pot with water to a depth of about two finger widths.
