🍽️ Zander Rolls with Carrot Filling

Ingredients
- 600 g Zander fillet
- 1 Carrot
- 150 g Low-fat quark
- 2 Egg yolks
- Parsley
- Chives
- 2 tbsp Breadcrumbs
- 2 tbsp Butter
- Salt
- Lemon juice
Instructions
- 1. Place the zander fillet between two layers of cling film.
- 2. Gently pound the fish flat using a meat mallet or a heavy pot.
- 3. Cut a piece of aluminum foil and spread it thinly with butter.
- 4. Place the flattened zander fillet onto the buttered foil.
- 5. Drizzle lemon juice over the fish.
- 6. Season the fish with a pinch of salt.
- 7. Peel the carrot.
- 8. Slice the carrot lengthwise into paper-thin strips.
- 9. Distribute the carrot strips evenly over the fish fillet.
- 10. Mix the quark in a bowl with the egg yolks.
- 11. Add the chopped herbs and breadcrumbs to the quark mixture.
- 12. Stir the ingredients together until you have a homogeneous mixture.
- 13. Spread the quark mixture evenly over the carrot strips.
- 14. Roll the fish tightly with the filling.
- 15. Twist the ends of the aluminum foil tightly to seal the roll.
- 16. Place the fish roll into a steamer insert.
- 17. Fill a suitable pot with water to a depth of about two finger widths.
- 18. Bring the water in the pot to a boil.
- 19. Place the steamer insert with the fish roll into the pot.
- 20. Cover the pot.
- 21. Steam the fish roll for 12 to 15 minutes.
- 22. Remove the fish roll from the pot.
- 23. Let the roll rest for about 5 minutes.
- 24. Slice the fish roll into even slices.
- 25. Serve the slices with boiled potatoes.
- 26. Add a mixed salad on the side.
- 27. Drizzle the salad with yogurt dressing.
