  1. 1. Wash the zucchini thoroughly and cut off the ends (flower and stem). Cut four zucchinis in half lengthwise. Carefully scoop out the soft center (core) with a spoon. Dice the remaining zucchini into small cubes.
  2. 2. Cut the ham into small, fine pieces.
  3. 3. Rinse the herbs briefly under running water, shake them dry, and chop them finely.
  4. 4. Slice the mozzarella into thin slices.
  5. 5. Sauté the ham in hot oil. Add the zucchini cubes and sauté briefly. Season with salt and pepper. Fold the chopped herbs into the mixture.
  6. 6. Fill the zucchini mixture into the hollowed-out zucchini halves. Place them on a greased baking sheet. Top each zucchini with mozzarella slices. Bake in a preheated oven at 180 degrees for about 10 minutes. Serve immediately, garnished with tarragon.
