🍽️ Greek Stuffed Grape Leaves (Dolmades)

Ingredients
- 200 g long-grain rice
- 300 g pickled grape leaves
- 4 tbsp raisins
- 200 g onions
- 0.5 bunch parsley
- 0.5 bunch dill
- 2 sprigs mint
- 5 tbsp olive oil
- 4 tbsp pine nuts
- 1 lemon
- salt
- pepper
- 1 pinch allspice powder
Instructions
- 1. Rinse the rice thoroughly under running water.
- 2. Place the rinsed rice into a pot.
- 3. Cover the rice with water.
- 4. Pre-cook the rice for about 15 minutes.
- 5. Dip the grape leaves briefly into boiling water.
- 6. Place the grape leaves on a kitchen towel.
- 7. Dry the grape leaves.
- 8. Cut off the tough stems from the grape leaves.
- 9. Drain the pre-cooked rice.
- 10. Transfer the rice into a large bowl.
- 11. Place the raisins in lukewarm water.
- 12. Soak the raisins.
- 13. Peel the onions.
- 14. Dice the onions finely.
- 15. Wash the herbs.
- 16. Shake the herbs dry.
- 17. Pluck the leaves from the herb stems.
- 18. Chop the herbs finely.
- 19. Add the drained raisins to the rice.
- 20. Add the chopped herbs to the rice.
- 21. Add the diced onions to the rice.
- 22. Add the pine nuts to the rice.
- 23. Add half of the lemon juice to the rice.
- 24. Add 2 tablespoons of oil to the rice.
- 25. Mix all ingredients thoroughly together.
- 26. Season the filling with salt.
- 27. Season the filling with pepper.
- 28. Season the filling with allspice.
- 29. Take about 1 tablespoon of the filling.
- 30. Place the filling onto a grape leaf.
- 31. Fold in the edges of the grape leaf.
- 32. Roll the grape leaf from the stem end towards the tip.
- 33. Repeat the process with the remaining grape leaves.
- 34. Place the rolls tightly next to each other in a pot.
- 35. Drizzle the rolls with the remaining lemon juice.
- 36. Drizzle the rolls with oil.
- 37. Place an upside-down plate on top of the rolls.
- 38. Weight down the rolls with the plate.
- 39. Pour hot water into the pot.
- 40. Ensure that all rolls are covered.
- 41. Simmer the dolmades over low heat.
- 42. Cook them for about 1 hour.
- 43. Let the dolmades cool down in the pot.
- 44. Lift the dolmades out of the broth.
- 45. Let the dolmades drain.
- 46. Serve the dolmades with lemon slices.
