🍰 Berry Waffle Sandwiches

Ingredients
- 3 Eggs
- 125 g Butter
- 60 g Sugar
- 180 g Flour
- 50 g Cornstarch
- 1 tsp Baking Powder
- 1 Pinch Salt
- 1 Small Amount Lemon Zest
- 250 ml Milk
- 100 ml Mineral Water
- 1 Packet Vanilla Sugar
- 150 g Heavy Cream
- 150 g Strawberries
- 100 g Raspberries
- Berry Sauce to taste (Ready-made product)
- Oil
Instructions
- 1. Separate the eggs. Set the egg yolks aside.
- 2. Whip the egg whites until stiff peaks form.
- 3. Mix the butter, sugar, lemon zest, vanilla sugar, and salt until creamy.
- 4. Stir in the egg yolks one by one into the butter mixture.
- 5. Combine the flour, starch, and baking powder in a separate bowl.
- 6. Sift the flour mixture over the foam.
- 7. Stir in the flour mixture and milk alternately.
- 8. Stir the mineral water into the batter.
- 9. Gently fold the whipped egg whites into the batter.
- 10. Preheat the waffle iron and grease it.
- 11. Pour the batter into the waffle iron in portions.
- 12. Bake the waffles until golden brown.
- 13. Let the waffles cool on a wire rack.
- 14. Wash the raspberries and strawberries and let them drain well.
- 15. Whip the cream until stiff.
- 16. Spread the whipped cream onto one waffle.
- 17. Top the cream with the berry sauce.
- 18. Place a second waffle on top.
- 19. Garnish the waffles with fresh strawberries and raspberries.
- 20. Serve the filled waffles.
