🍽️ Nutty Celery Cheese Schnitzels with Sweet Potato Mash

Ingredients
- 800 g celeriac
- 0.5 lemon
- salt
- 800 g sweet potatoes
- 180 g Alpine cheese (45 % fat in dry matter)
- 0.5 bunch parsley (10 g)
- pepper
- 50 g ground almond kernels (5 tbsp)
- 80 g chopped peanut kernels (5–6 tbsp)
- 50 g whole wheat breadcrumbs (5 tbsp)
- 30 g whole wheat flour (2 tbsp)
- 2 eggs
- 3 tbsp olive oil
- 20 g butter
- 200 ml milk (3.5 % fat)
- nutmeg
Instructions
- 1. Wash the celery thoroughly and peel it.
- 2. Cut the celery into slices about 1.5 centimeters thick.
- 3. Bring a pot of salted water to a boil.
- 4. Squeeze the juice from half of the lemon.
- 5. Add the lemon juice and the celery slices to the boiling water.
- 6. Cook the slices over medium heat for about 10 minutes.
- 7. Drain the water.
- 8. Pat the celery slices dry with a kitchen towel.
- 9. Peel the sweet potatoes and wash them.
- 10. Cut the sweet potatoes into small cubes.
- 11. Cook the sweet potato cubes in a pot of water for about 15 minutes.
- 12. Slice the cheese.
- 13. Use a knife to cut small pockets into the center of the celery slices.
- 14. Fill the pockets with the cheese slices.
- 15. Wash the parsley and shake it dry.
- 16. Finely chop the parsley.
- 17. Add the chopped parsley, some salt, pepper, almonds, peanuts, and whole grain breadcrumbs to a plate.
- 18. Mix the ingredients in this plate well together.
- 19. Place the whole wheat flour in a second plate.
- 20. Whisk the eggs in a third plate.
- 21. Coat the stuffed schnitzels first in the flour.
- 22. Then dip the floured schnitzels into the whisked eggs.
- 23. Finally, coat the schnitzels in the nut mixture.
- 24. Heat oil in a frying pan.
- 25. Fry the celery schnitzels on both sides for about 5 minutes until golden brown.
- 26. Drain the cooked sweet potatoes.
- 27. Press the sweet potatoes through a potato masher.
- 28. Add pieces of butter to the mash.
- 29. Stir milk into the mash.
- 30. Season the mash with salt, pepper, and a pinch of freshly grated nutmeg.
- 31. Place the sweet potato mash on the plates.
- 32. Place the celery schnitzels on top of the mash.
- 33. Sprinkle the schnitzels with the remaining peanuts.
- 34. Serve the dish immediately.
