  1. 1. Wash the celery thoroughly and peel it.
  2. 2. Cut the celery into slices about 1.5 centimeters thick.
  3. 3. Bring a pot of salted water to a boil.
  4. 4. Squeeze the juice from half of the lemon.
  5. 5. Add the lemon juice and the celery slices to the boiling water.
  6. 6. Cook the slices over medium heat for about 10 minutes.
  7. 7. Drain the water.
  8. 8. Pat the celery slices dry with a kitchen towel.
  9. 9. Peel the sweet potatoes and wash them.
  10. 10. Cut the sweet potatoes into small cubes.
  11. 11. Cook the sweet potato cubes in a pot of water for about 15 minutes.
  12. 12. Slice the cheese.
  13. 13. Use a knife to cut small pockets into the center of the celery slices.
  14. 14. Fill the pockets with the cheese slices.
  15. 15. Wash the parsley and shake it dry.
  16. 16. Finely chop the parsley.
  17. 17. Add the chopped parsley, some salt, pepper, almonds, peanuts, and whole grain breadcrumbs to a plate.
  18. 18. Mix the ingredients in this plate well together.
  19. 19. Place the whole wheat flour in a second plate.
  20. 20. Whisk the eggs in a third plate.
  21. 21. Coat the stuffed schnitzels first in the flour.
  22. 22. Then dip the floured schnitzels into the whisked eggs.
  23. 23. Finally, coat the schnitzels in the nut mixture.
  24. 24. Heat oil in a frying pan.
  25. 25. Fry the celery schnitzels on both sides for about 5 minutes until golden brown.
  26. 26. Drain the cooked sweet potatoes.
  27. 27. Press the sweet potatoes through a potato masher.
  28. 28. Add pieces of butter to the mash.
  29. 29. Stir milk into the mash.
  30. 30. Season the mash with salt, pepper, and a pinch of freshly grated nutmeg.
  31. 31. Place the sweet potato mash on the plates.
  32. 32. Place the celery schnitzels on top of the mash.
  33. 33. Sprinkle the schnitzels with the remaining peanuts.
  34. 34. Serve the dish immediately.
