🍽️ Fruity Radicchio Salad with Yogurt Dressing

Ingredients
- 50 g small mandarin (1 small mandarin)
- 75 g small tart apples (1 small tart apple)
- 20 g yogurt (1.5% fat) (1 tbsp)
- 0.5 small lime
- salt
- pepper
- 0.25 bunch chives
- 5 g sunflower seeds (1 tsp)
- 2 leaves radicchio
Instructions
- 1. Peel the mandarin orange.
- 2. Carefully separate the fruit segments from the membranes.
- 3. Cut the mandarin pieces into small bites.
- 4. Wash the apple thoroughly.
- 5. Cut the apple into four quarters.
- 6. Remove the core using a paring knife or a spoon.
- 7. Dice the apple flesh very finely.
- 8. Place the cut mandarins and diced apple into a small bowl.
- 9. Add the yogurt to the fruit mixture.
- 10. Mix everything together thoroughly.
- 11. Squeeze the lime half to extract the juice.
- 12. Stir the lime juice into the yogurt-fruit mixture.
- 13. Season the filling with a pinch of salt.
- 14. Season the filling with a pinch of pepper.
- 15. Wash the chives.
- 16. Shake the chives dry.
- 17. Cut the chives into small rings.
- 18. Place the sunflower seeds in a non-stick pan.
- 19. Roast the seeds without adding extra fat.
- 20. Stir occasionally while roasting.
- 21. Remove the pan from the heat as soon as the seeds are light brown.
- 22. Wash the radicchio leaves.
- 23. Shake the leaves dry.
- 24. Fill the radicchio leaves with the yogurt-fruit mixture.
- 25. Sprinkle the roasted sunflower seeds over the filled leaves.
- 26. Sprinkle the chive rings over the filled leaves.
- 27. Plate the salad.
