  1. 1. Place the turkey cutlets between two sheets of cling film.
  2. 2. Pound the cutlets flat with a meat mallet.
  3. 3. Cut the ham slices in half crosswise.
  4. 4. Wash the sage leaves and pat them dry.
  5. 5. Pluck six sage leaves from the stems.
  6. 6. Top each cutlet with one piece of ham.
  7. 7. Place one sage leaf on the ham.
  8. 8. Fold the cutlets in half.
  9. 9. Secure the filling with toothpicks.
  10. 10. Season the cutlets with salt and pepper.
  11. 11. Wash the leaf spinach thoroughly.
  12. 12. Drain the spinach in a colander.
  13. 13. Peel the onion.
  14. 14. Dice the onion finely.
  15. 15. Heat a grill pan.
  16. 16. Fry the cutlets for three to four minutes on the first side.
  17. 17. Fry the cutlets for three to four minutes on the second side.
  18. 18. Heat olive oil in a pot.
  19. 19. Sauté the onion cubes in the oil.
  20. 20. Add the spinach to the pot.
  21. 21. Stir the spinach until it wilts.

  23. 23. Drizzle the cutlets with balsamic cream.
  24. 24. Serve the cutlets on top of the spinach.
