🍽️ Crispy Walnut and Apple Filling in Turkey Rolls

Ingredients
- 30 g walnuts
- 200 g celeriac (1 piece)
- salt
- 200 g large apples (1 large apple)
- 3 tbsp yogurt (0.3% fat)
- pepper
- 1 tbsp Worcestershire sauce
- Tabasco
- 200 g smoked turkey breast (8 slices)
- 1 small lemon
- 200 g ripe avocado (1 ripe avocado)
- 1 tbsp olive oil
Instructions
- 1. Roughly chop the walnut kernels.
- 2. Lightly toast the nuts in a pan without added fat.
- 3. Peel the celery and wash it thoroughly.
- 4. Cut the celery into thin strips.
- 5. Place the celery strips in boiling salted water for 1 minute (this is called blanching, i.e., cooking briefly in boiling water).
- 6. Remove the celery with a slotted spoon or drain it in a sieve.
- 7. Immediately rinse the celery with cold water to stop the cooking process.
- 8. Wash the apple thoroughly.
- 9. Slice the apple and remove the core.
- 10. Cut the apple slices into thin strips.
- 11. Place the celery, apple pieces, and toasted walnuts in a bowl.
- 12. Mix the ingredients with the yogurt.
- 13. Season the filling with salt and pepper.
- 14. Add some Worcestershire sauce.
- 15. Add some Tabasco sauce.
- 16. Take a slice of turkey deli meat.
- 17. Place a spoonful of the celery salad filling on the turkey slice.
- 18. Roll up the turkey slice tightly.
- 19. Secure the roll with a toothpick.
- 20. Repeat this with the remaining turkey slices.
- 21. Squeeze the lemon to extract the juice.
- 22. Halve the avocado and remove the pit.
- 23. Carefully remove the flesh from the skin.
- 24. Slice the avocado flesh.
- 25. Place the avocado slices on a serving plate.
- 26. Season the avocado with salt and pepper.
- 27. Drizzle 1 to 2 tablespoons of lemon juice over the avocado.
- 28. Drizzle everything with some oil.
- 29. Place the stuffed turkey rolls on top of the avocado.
- 30. Serve the dish immediately.
