  1. 1. Peel the onion and the garlic clove.
  2. 2. Finely dice the onion and garlic.
  3. 3. Roughly chop the olives.
  4. 4. Place the onion, garlic, and olives into a bowl.
  5. 5. Rinse the thyme.
  6. 6. Shake the thyme dry.
  7. 7. Pluck the thyme leaves from the stems.
  8. 8. Add the thyme leaves to the bowl.
  9. 9. Add the turkey mince to the bowl.
  10. 10. Season the mixture with salt and pepper.
  11. 11. Knead all ingredients into a dough using the dough hooks of a hand mixer.
  12. 12. Divide the dough into four equal portions.
  13. 13. Cut the feta cheese into four cubes.
  14. 14. Wet your hands with water.
  15. 15. Shape one portion of mince into a flat circle.
  16. 16. Repeat this with the remaining three portions.
  17. 17. Place a cheese cube in the center of a meat circle.
  18. 18. Close the dough around the cheese.
  19. 19. Shape the filled portion into a flat cutlet.
  20. 20. Repeat this for all four cutlets.
  21. 21. Place the cutlets on an aluminum foil tray.
  22. 22. Brush the cutlets all over with olive oil.
  23. 23. Preheat the grill.
  24. 24. Place the cutlets on the hot grill.
  25. 25. Grill the cutlets for about 15 minutes.
  26. 26. Carefully turn the cutlets once after half the cooking time.
