🍽️ Oven Turkey Breast with Root Vegetables

Ingredients
- 600 g firm-cooking potatoes
- 2 parsley roots
- 4 tbsp olive oil
- salt
- 800 g turkey breast fillet
- 250 g white bread (stale)
- 150 ml milk
- 1 garlic clove
- 2 tbsp freshly chopped herbs (e.g. parsley, marjoram)
- 1 egg
- pepper (from the mill)
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Peel the potatoes and the parsley root.
- 3. Cut the vegetables into large chunks.
- 4. Place the vegetables in a bowl.
- 5. Drizzle two tablespoons of olive oil over them.
- 6. Lightly salt the vegetables.
- 7. Mix everything well so the oil and salt are evenly distributed.
- 8. Spread the vegetables out on a baking sheet.
- 9. Place the baking sheet in the oven.
- 10. Bake the vegetables for about ten minutes.
- 11. Rinse the turkey breast under running water.
- 12. Pat the turkey breast dry with kitchen paper.
- 13. Cut a pocket into the side of the turkey breast.
- 14. Cut the white bread into small cubes.
- 15. Place the bread cubes in a bowl.
- 16. Pour hot milk over the bread.
- 17. Let the bread absorb the milk for a few minutes.
- 18. Peel the garlic.
- 19. Finely chop the garlic.
- 20. Mix the chopped garlic with the herbs and the egg.
- 21. Fold the garlic-egg mixture into the moistened bread.
- 22. Season the filling generously with salt and pepper.
- 23. Stuff the turkey breast with the bread mixture.
- 24. Secure the opening of the breast with toothpicks.
- 25. Season the outside of the turkey breast with salt and pepper.
- 26. Drizzle the remaining olive oil over the breast.
- 27. Place the turkey breast on the tray with the pre-baked vegetables.
- 28. Return the tray to the oven.
- 29. Bake everything for another 25 to 30 minutes until cooked through.
- 30. Slice the cooked turkey breast.
- 31. Plate the slices with the vegetables.
- 32. Serve green beans on the side if you like.
