  1. 1. Preheat the oven to 180 degrees Celsius fan-forced.
  2. 2. Peel the potatoes and the parsley root.
  3. 3. Cut the vegetables into large chunks.
  4. 4. Place the vegetables in a bowl.
  5. 5. Drizzle two tablespoons of olive oil over them.
  6. 6. Lightly salt the vegetables.
  7. 7. Mix everything well so the oil and salt are evenly distributed.
  8. 8. Spread the vegetables out on a baking sheet.
  9. 9. Place the baking sheet in the oven.
  10. 10. Bake the vegetables for about ten minutes.
  11. 11. Rinse the turkey breast under running water.
  12. 12. Pat the turkey breast dry with kitchen paper.
  13. 13. Cut a pocket into the side of the turkey breast.
  14. 14. Cut the white bread into small cubes.
  15. 15. Place the bread cubes in a bowl.
  16. 16. Pour hot milk over the bread.
  17. 17. Let the bread absorb the milk for a few minutes.
  18. 18. Peel the garlic.
  19. 19. Finely chop the garlic.
  20. 20. Mix the chopped garlic with the herbs and the egg.
  21. 21. Fold the garlic-egg mixture into the moistened bread.
  22. 22. Season the filling generously with salt and pepper.
  23. 23. Stuff the turkey breast with the bread mixture.
  24. 24. Secure the opening of the breast with toothpicks.
  25. 25. Season the outside of the turkey breast with salt and pepper.
  26. 26. Drizzle the remaining olive oil over the breast.
  27. 27. Place the turkey breast on the tray with the pre-baked vegetables.
  28. 28. Return the tray to the oven.
  29. 29. Bake everything for another 25 to 30 minutes until cooked through.
  30. 30. Slice the cooked turkey breast.
  31. 31. Plate the slices with the vegetables.
  32. 32. Serve green beans on the side if you like.
