🍳 Pizza-stuffed Rolls

Ingredients
- 1 red bell pepper
- 1 handful arugula (à 40 g)
- 4 spelt rolls (or whole grain rolls)
- 2 tbsp tomato paste (à 15 g; no added sugar)
- 4 slices Emmental cheese (30 % fat in dry matter)
- 1 tsp olive oil
Instructions
- 1. Clean the peppers, wash them, and cut them into very small cubes. Wash the arugula as well and shake it dry.
- 2. Slice the rolls open and spread tomato paste on the bottom halves. Distribute the cheese, pepper cubes, and arugula on top. Place the top halves on and press down lightly.
- 3. Heat the oil in a pan. Fry the stuffed rolls in it over medium heat for about 2 to 3 minutes until golden brown and crispy, until the cheese has melted.
- 4. Press the rolls slightly together so everything holds well. Serve warm.
