  1. 1. Whisk eggs, flour, milk, sugar, and salt into a smooth batter.
  2. 2. Let the batter rest for two hours.
  3. 3. Heat a large pan and add a little butter.
  4. 4. Stir the sparkling water into the batter while the butter melts.
  5. 5. Pour a small ladle of batter into the pan.
  6. 6. Swirl the pan to spread the batter evenly.
  7. 7. Cook the crepe until bubbles form.
  8. 8. Flip the crepe and cook the other side.
  9. 9. Remove the finished crepe and keep it warm.
  10. 10. Repeat the process until all the batter is used.
  11. 11. Bring the cream to a brief boil.
  12. 12. Add the filling ingredients to the hot cream.
  13. 13. Simmer the filling for about one minute.
  14. 14. Place one tablespoon of filling onto each crepe.
  15. 15. Fold each crepe in half twice.
  16. 16. Warm the milk and melt the chocolate in it.
  17. 17. Remove the pot from the heat.
  18. 18. Stir the egg yolks into the chocolate milk.
  19. 19. Add cocoa, butter, sugar, and rum, and stir until smooth.
  20. 20. Thin the sauce with a little milk if necessary.
  21. 21. Pour the sauce over the filled crepes.
