🍰 Hungarian-style filled crepes

Ingredients
- 3 eggs
- 250 g flour
- 200 g milk
- 1 tsp sugar
- 1 pinch salt
- butter
- 250 ml mineral water
- 200 g whipping cream
- 200 g ground walnuts
- 50 g chopped raisins
- 120 g sugar
- 2 tbsp rum
- 1 untreated orange (zest)
- 1 bar semi-bitter chocolate
- 200 ml milk
- 3 egg yolks
- 2 tbsp cocoa powder
- 1 tbsp melted butter
- 2 tbsp sugar
- 2 tbsp white rum
Instructions
- 1. Whisk eggs, flour, milk, sugar, and salt into a smooth batter.
- 2. Let the batter rest for two hours.
- 3. Heat a large pan and add a little butter.
- 4. Stir the sparkling water into the batter while the butter melts.
- 5. Pour a small ladle of batter into the pan.
- 6. Swirl the pan to spread the batter evenly.
- 7. Cook the crepe until bubbles form.
- 8. Flip the crepe and cook the other side.
- 9. Remove the finished crepe and keep it warm.
- 10. Repeat the process until all the batter is used.
- 11. Bring the cream to a brief boil.
- 12. Add the filling ingredients to the hot cream.
- 13. Simmer the filling for about one minute.
- 14. Place one tablespoon of filling onto each crepe.
- 15. Fold each crepe in half twice.
- 16. Warm the milk and melt the chocolate in it.
- 17. Remove the pot from the heat.
- 18. Stir the egg yolks into the chocolate milk.
- 19. Add cocoa, butter, sugar, and rum, and stir until smooth.
- 20. Thin the sauce with a little milk if necessary.
- 21. Pour the sauce over the filled crepes.
