🍽️ Cheese Omelet Rolls with Spring Greens

Ingredients
- 4 eggs
- salt
- 150 g flour
- 70 ml milk
- butter (for frying)
- 300 g cottage cheese
- 50 g mountain cheese
- 1 egg
- salt

- 4 large slices mountain cheese
- 0.5 bunch radishes
- 1 handful radish sprouts
- 1 handful lamb's lettuce
- 2 tbsp white balsamic vinegar
- salt
- pepper
Instructions
- 1. Separate the eggs. Carefully separate the yolks from the whites.
- 2. Whip the egg whites until they form stiff peaks.
- 3. Whisk the egg yolks in a separate bowl.
- 4. Mix the egg yolks with the milk.
- 5. Season the yolk-milk mixture with salt and pepper.
- 6. Stir the flour into the yolk mixture.
- 7. Gently fold the stiffly beaten egg whites into the yolk mixture.
- 8. Melt one tablespoon of butter in a large non-stick pan.
- 9. Pour one quarter of the egg mixture into the hot pan.
- 10. Spread the mixture evenly with a spoon.
- 11. Place the lid on the pan.
- 12. Cook the omelet for about five minutes over medium heat.
- 13. Flip the omelet using the pan lid.
- 14. Cook the other side for another five minutes.
- 15. Repeat the process with the remaining batter to make three more omelets.
- 16. Keep all finished omelets warm in the oven at 80 degrees Celsius.
- 17. Grate the mountain cheese finely.
- 18. Mix the grated cheese with the cottage cheese.
- 19. Separate another egg.
- 20. Stir the egg yolk into the cheese filling.
- 21. Whip the egg white into a foam.
- 22. Fold the beaten egg white into the cheese mixture.
- 23. Season the filling with salt and pepper.
- 24. Spread the cheese filling evenly over the four omelets.
- 25. Roll up the omelets tightly.
- 26. Place the rolls into a baking dish.
- 27. Bake the rolls for about ten to fifteen minutes at 180 degrees Celsius.
- 28. Place one slice of cheese on each roll.
- 29. Broil the rolls briefly until the cheese melts and turns golden brown.
- 30. Wash the sprouts thoroughly.
- 31. Wash the lamb's lettuce as well.
- 32. Shake the vegetables dry.
- 33. Shave the radishes into thin slices.
- 34. Lightly salt the radish slices.
- 35. Mix the radishes with the salad greens.
- 36. Marinate the salad with vinegar, salt, and pepper.
- 37. Distribute the salad onto the plates.
- 38. Take the cheese rolls out of the oven.
- 39. Cut the rolls diagonally in half.
- 40. Place the rolls on top of the salad.
- 41. Serve the dish immediately.
