🍽️ Baked Potatoes Stuffed with Apple and Cheese

Ingredients
- 16 medium sweet potatoes
- 1 bunch spring onions
- 1 apple
- 1 tbsp lemon juice
- 200 g cheddar
- salt
- pepper (from the mill)
- aluminum foil
- 2 tbsp oil (for brushing)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes in salted water for 20 minutes.
- 3. Check the potatoes: they should be almost soft but not completely done.
- 4. Wash the spring onions and slice them into thin rings.
- 5. Wash the apple and cut it into quarters.
- 6. Remove the core from the apple quarters.
- 7. Grate the apple flesh finely.
- 8. Drizzle the grated apple with lemon juice to prevent browning.
- 9. Cut the aluminum foil into 16 equal pieces.
- 10. Brush the aluminum foil pieces with oil.
- 11. Cut a small lid off each potato.
- 12. Carefully scoop out the inside of the potatoes.
- 13. Mash the removed potato flesh finely with a fork.
- 14. Grate the cheese.
- 15. Mix the grated cheese with the spring onions, apple, and mashed potato.
- 16. Season the filling with salt and pepper.
- 17. Fill the mixture back into the hollowed-out potato halves.
- 18. Place the potato lids back on top of the filling.
- 19. Wrap the stuffed potatoes tightly in the prepared aluminum foil.
- 20. Preheat the oven to 160 degrees Celsius with fan.
- 21. Place the potatoes on the grill rack.
- 22. Bake the potatoes for 10 minutes until fully cooked.
