🍝 Austrian Kletzen in Stuffed Pasta

Ingredients
- 300 g sheep's milk yogurt
- 4 tbsp sour cream
- 2 tbsp sugar
- 2 tbsp lemon juice
- 50 g butter
- 1 tbsp honey
- 2 tbsp thyme leaves
- 1 tbsp organic lemon zest
Instructions
- 1. Place the Kletzen in the wine two days before serving.
- 2. Cover the bowl and let the mixture steep overnight.
- 3. Drain the wine the next day and catch it in a separate container.
- 4. Bring the caught wine to a brief boil.
- 5. Pour the hot wine back over the Kletzen.
- 6. Let the Kletzen steep for another night.
- 7. On the third day, ensure the Kletzen have absorbed all the liquid.
- 8. Dice the dried fruit into small cubes.
- 9. Mix the dried fruit cubes with the honey.
- 10. Fold in the baguette cubes.
- 11. Finely chop the pumpkin seeds.
- 12. Mix everything thoroughly.
- 13. Knead flour, egg, oil, and about 80 milliliters of water into a smooth dough.
- 14. Add more flour or water if necessary to adjust the consistency.
- 15. Brush the dough with oil.
- 16. Wrap the dough in plastic wrap.
- 17. Let the dough rest at room temperature for about 30 minutes.
- 18. Sprinkle some flour on a work surface.
- 19. Roll out the dough thinly.
- 20. Cut out circles with a diameter of about 6 centimeters.
- 21. Place one teaspoon of filling in the center of each dough circle.
- 22. Brush the edges with the beaten egg white.
- 23. Fold the pasta halves over.
- 24. Press the edges firmly to seal them.
- 25. Place the shaped pasta on a floured surface.
- 26. Repeat the process until all pasta are formed.
- 27. Stir yogurt, sour cream, sugar, and lemon juice until smooth.
- 28. Cook the pasta in a large pot of boiling salted water for about 3 minutes.
- 29. Drain the pasta and let it drain well.
- 30. Melt the butter in a pan.
- 31. Stir honey and thyme into the butter.
- 32. Toss the drained pasta in the butter-honey mixture.
- 33. Divide the pasta among plates.
- 34. Sprinkle the pasta with lemon zest.
- 35. Serve the yogurt mixture alongside.
