🍝 Tortellini with Meat, Peppers and Orange Cream Sauce

Ingredients
- 500 g Tortellini (cheese filling)
- salt
- 4 schnitzels (turkey or pork)
- 1 shallot
- 1 garlic clove
- ghee
- 0.5 red bell pepper
- 0.5 yellow bell pepper
- 1 tsp yellow curry paste
- 0.5 tsp curry powder
- 200 ml heavy cream
- 50 ml vegetable broth
- salt
- pepper (from the mill)
- cayenne pepper
- 1 orange
- 2 tbsp cress
Instructions
- 1. Bring a large pot of salted water to a boil.
- 2. Cook the tortellini in the water according to the package instructions.
- 3. Cut the meat into thin strips in the meantime.
- 4. Peel the shallot and the garlic clove.
- 5. Finely dice the shallot and garlic.
- 6. Heat ghee (clarified butter) in a large pan.
- 7. Fry the meat strips in the hot fat.
- 8. Add the diced shallot and garlic to the pan.
- 9. Sauté the vegetables briefly with the meat.
- 10. Remove the stems and seeds from the bell peppers.
- 11. Cut the bell peppers into strips or small pieces.
- 12. Add the peppers to the pan.
- 13. Spread curry paste and curry powder over the vegetables.
- 14. Sauté the spices briefly until fragrant.
- 15. Deglaze the mixture with cream.
- 16. Pour in some vegetable broth.
- 17. Bring the sauce to a boil.
- 18. Let the sauce simmer gently for about 5 minutes.
- 19. Season the meat mixture to taste.
- 20. Adjust the sauce to be tangy and savory.
- 21. Peel the orange and remove the white pith.
- 22. Segment the orange over a bowl to catch the juice.
- 23. Separate the orange segments from the membranes.
- 24. Stir the orange segments into the hot sauce.
- 25. Drain the tortellini in a colander.
- 26. Remove the pot from the heat.
- 27. Toss the tortellini into the meat mixture.
- 28. Plate the dish.
- 29. Garnish with fresh cress.
