🍽️ Fresh Cucumber Rolls with Turkey Filling

Ingredients
- 1 Mini Cucumber
- Salt
- 2 sprigs Basil
- 40 g peeled, pickled red bell peppers (drained weight; jar)
- 50 g smoked turkey breast (2 slices)
Instructions
- 1. Wash the cucumber thoroughly under running water.
- 2. Dry the cucumber with a kitchen towel.
- 3. Cut off the ends of the cucumber.
- 4. Peel the cucumber completely using a vegetable peeler.
- 5. Cut 12 to 14 very thin, long slices from the cucumber.
- 6. Lay the cucumber slices flat next to each other on a board.
- 7. Sprinkle some salt over the cucumber slices.
- 8. Wash the basil under cold water.
- 9. Shake the basil dry.
- 10. Pluck the basil leaves from the stems.
- 11. Set aside some whole basil leaves for decoration.
- 12. Cut the rest of the basil into very fine strips.
- 13. Cut the bell pepper into long, thin strips.
- 14. Cut the turkey breast into fine, long strips.
- 15. Put the pepper and turkey strips into a bowl.
- 16. Add the basil strips to the bowl.
- 17. Mix the vegetables and meat well together.
- 18. Pat the salted cucumber slices dry with kitchen paper.
- 19. Place 3 to 4 cucumber slices slightly overlapping next to each other.
- 20. Distribute the filling evenly over the cucumber slices.
- 21. Roll the cucumber slices tightly into rolls.
- 22. Decorate the finished rolls with the saved basil leaves.
