  1. 1. Wash the cucumber thoroughly under running water.
  2. 2. Dry the cucumber with a kitchen towel.
  3. 3. Cut off the ends of the cucumber.
  4. 4. Peel the cucumber completely using a vegetable peeler.
  5. 5. Cut 12 to 14 very thin, long slices from the cucumber.
  6. 6. Lay the cucumber slices flat next to each other on a board.
  7. 7. Sprinkle some salt over the cucumber slices.
  8. 8. Wash the basil under cold water.
  9. 9. Shake the basil dry.
  10. 10. Pluck the basil leaves from the stems.
  11. 11. Set aside some whole basil leaves for decoration.
  12. 12. Cut the rest of the basil into very fine strips.
  13. 13. Cut the bell pepper into long, thin strips.
  14. 14. Cut the turkey breast into fine, long strips.
  15. 15. Put the pepper and turkey strips into a bowl.
  16. 16. Add the basil strips to the bowl.
  17. 17. Mix the vegetables and meat well together.
  18. 18. Pat the salted cucumber slices dry with kitchen paper.
  19. 19. Place 3 to 4 cucumber slices slightly overlapping next to each other.
  20. 20. Distribute the filling evenly over the cucumber slices.
  21. 21. Roll the cucumber slices tightly into rolls.
  22. 22. Decorate the finished rolls with the saved basil leaves.
