🍽️ Stuffed Cucumber Cups

Ingredients
- 5 spring onions
- 1 red chili pepper
- 1 large lime
- 150 g unsalted roasted peanut kernels
- 2 tsp cane sugar
- 2 tbsp Thai fish sauce
- 1 cucumber
- 3 tbsp fried onions (ready-made product)
Instructions
- 1. Wash the spring onions and remove the tough ends.
- 2. Cut the chili pepper in half lengthwise and remove the seeds.
- 3. Finely chop the spring onions and the chili.
- 4. Place the chopped ingredients into a bowl.
- 5. Cut the lime in half and squeeze out the juice.
- 6. Measure out 4 tablespoons of lime juice.
- 7. Add the lime juice to the onion-chili mixture in the bowl.
- 8. Coarsely crush the peanuts in a blender or food processor.
- 9. Stir the peanuts, brown sugar, and fish sauce into the onion-chili mixture.
- 10. Wash the cucumber and pat it dry.
- 11. Cut the cucumber into 8 roughly equal pieces.
- 12. Hollow out each cucumber piece from one side using a melon baller.
- 13. Make sure to leave a thin bottom layer intact.
- 14. Fill the hollowed cucumber cups with the peanut mixture.
- 15. Sprinkle the filled cups with fried onions.
- 16. Serve the stuffed cucumber cups.
