  1. 1. Wash the spring onions and remove the tough ends.
  2. 2. Cut the chili pepper in half lengthwise and remove the seeds.
  3. 3. Finely chop the spring onions and the chili.
  4. 4. Place the chopped ingredients into a bowl.
  5. 5. Cut the lime in half and squeeze out the juice.
  6. 6. Measure out 4 tablespoons of lime juice.
  7. 7. Add the lime juice to the onion-chili mixture in the bowl.
  8. 8. Coarsely crush the peanuts in a blender or food processor.
  9. 9. Stir the peanuts, brown sugar, and fish sauce into the onion-chili mixture.
  10. 10. Wash the cucumber and pat it dry.
  11. 11. Cut the cucumber into 8 roughly equal pieces.
  12. 12. Hollow out each cucumber piece from one side using a melon baller.
  13. 13. Make sure to leave a thin bottom layer intact.
  14. 14. Fill the hollowed cucumber cups with the peanut mixture.
  15. 15. Sprinkle the filled cups with fried onions.
  16. 16. Serve the stuffed cucumber cups.
