🍽️ Grilled Tomatoes on Cedar Planks

Ingredients
- 200 g large tomatoes (4 tomatoes each)
- 2 yellow bell peppers
- 3 spring onions
- 2 garlic cloves
- 1 sprig rosemary
- 1 tbsp olive oil (10 ml)
- salt
- pepper
- 2 tbsp balsamic vinegar
- 80 g cheddar (50% fat in dry matter)
Instructions
- 1. Soak the cedar planks in cold water for at least one hour.
- 2. Wash the tomatoes and pat them dry with a cloth.
- 3. Cut off the top part of each tomato and keep it as a lid.
- 4. Hollow out the tomatoes and dice the removed flesh into small cubes.
- 5. Wash the bell peppers, halve them, remove the seeds, and dice them.
- 6. Wash the spring onions, trim them, and slice them into thin rings.
- 7. Peel the garlic and chop it finely.
- 8. Wash the rosemary, shake off excess water, and pluck off the needles.
- 9. Heat oil in a pan over medium heat.
- 10. Sauté the spring onion rings, garlic, and pepper cubes for two minutes.
- 11. Stir the tomato cubes into the vegetables.
- 12. Season the mixture with salt, pepper, and vinegar.
- 13. Grate the cheese.
- 14. Fill the vegetables into the hollowed-out tomatoes.
- 15. Sprinkle the cheese and rosemary needles on top.
- 16. Let the cedar planks drain well.
- 17. Place the stuffed tomatoes with their lids onto the planks.
- 18. Place the planks on the grate of a preheated kettle grill.
- 19. Grill the tomatoes covered for 12 to 15 minutes until the cheese has melted.
