🍽️ Juicy Meatballs with Feta Filling

Ingredients
- 1 Flatbread
- 2 Garlic cloves
- 1 Onion
- 1 tbsp Butter
- 2 tbsp chopped parsley
- 600 g Ground beef
- 0.5 tsp dried oregano
- 0.25 tsp ground cumin
- Salt
- Pepper (from the mill)
- 200 g Feta cheese
- 6 tbsp Olive oil
- 2 tbsp Lemon juice
- 150 g green and black olives
Instructions
- 1. Cut about 100 grams of pita bread into small cubes.
- 2. Place the bread cubes in a bowl of water and let them soak.
- 3. Peel one clove of garlic and one onion.
- 4. Finely chop the garlic and the onion.
- 5. Heat some butter in a pan.
- 6. Sauté the garlic and onion in the hot butter until they are translucent.
- 7. Remove the pan from the heat and let the mixture cool down slightly.
- 8. Squeeze the soaked bread well with your hands to remove the water.
- 9. Add the squeezed bread to minced meat.
- 10. Add the cooled onion-garlic mixture to the meat.
- 11. Chop fresh parsley and add half of the amount to the meat.
- 12. Sprinkle oregano and cumin over the mixture.
- 13. Season everything with salt and pepper to taste.
- 14. Knead all ingredients with your hands to form a homogeneous meat dough.
- 15. Crumble feta cheese into small pieces.
- 16. Wet your hands with a little water so the dough does not stick.
- 17. Take a portion of meat dough and shape it into a flat disc.
- 18. Place a few pieces of feta cheese in the center of the meat disc.
- 19. Fold the meat edges over the cheese.
- 20. Press the edges firmly together so the filling stays inside.
- 21. Mash the remaining feta cheese in a bowl.
- 22. Mix the crumbled cheese with three tablespoons of olive oil.
- 23. Add fresh parsley and lemon juice to the cheese mixture.
- 24. Stir everything well until a creamy sauce forms.
- 25. Heat some olive oil in a large pan.
- 26. Place the stuffed meatballs in the hot pan.
- 27. Fry the meatballs on each side for about eight minutes until golden brown.
- 28. Serve the hot meatballs on leaf salads.
- 29. Pour the feta-olive cream over the salad.
- 30. Serve the dish with the remaining pita bread.
