🍽️ Grilled Stuffed Duck

Ingredients
- 1.8 kg young duck (1 young duck)
- 4 spring onions
- 1 apple
- 2 tbsp orange juice
- 2 tbsp sherry
- 1 tbsp honey
- 2 tbsp soy sauce
- salt
- pepper (from the mill)
- cayenne pepper
Instructions
- 1. Rinse the duck thoroughly under running water.
- 2. Pat the duck completely dry with a kitchen towel.
- 3. Season the inside of the duck with salt and pepper.
- 4. Wash the spring onions and trim the ends.
- 5. Slice the spring onions into thin rings.
- 6. Peel the apple and remove the core.
- 7. Cut the apple into eight equal pieces.
- 8. Stuff the duck with the spring onions and apple wedges.
- 9. Close the opening of the duck using a piece of kitchen twine.
- 10. Skewer the duck onto a sturdy grill rod.
- 11. Whisk together the orange juice, sherry, honey, soy sauce, and cayenne pepper in a bowl.
- 12. Brush the duck generously with the marinade.
- 13. Preheat your grill to the desired temperature.
- 14. Place the duck on the grill.
- 15. Grill the duck for about 60 to 70 minutes.
- 16. Brush the duck repeatedly with the remaining marinade during the grilling time.
