🍳 Classic Mustard Mayo Eggs

Ingredients
- 6 eggs
- 1 tbsp mayonnaise
- 1 tbsp crème fraîche
- 1 tsp hot mustard
- Tabasco (to taste)
- salt
- 2 green olives (stuffed with pepper)
- 1 tbsp chive rings (for garnish)
- mustard seeds
- pepper (from the mill)
- paprika powder (sweet or hot for dusting)
Instructions
- 1. Boil the eggs until hard-boiled. Immediately shock them in cold water. Peel off the shell. Cut the eggs in half lengthwise. Carefully remove the yolks and place them in a bowl.
- 2. Add the mayonnaise, crème fraîche, and mustard to the bowl. Mix the mixture well. Add a few drops of Tabasco if desired. Finally, season the filling with salt.
- 3. Fill the mustard cream back into the egg white halves using a small spoon. Alternatively, fill the cream into a piping bag with a star tip and pipe it into the eggs.
- 4. Drain the olives. Cut them in half lengthwise. Remove the paprika filling from the olives. Slice the olives into thin rounds. Finely chop the paprika filling.
- 5. Garnish each filled egg half with an olive slice and some chopped paprika. Sprinkle the eggs with chive rings, mustard seeds, pepper, and paprika powder. Serve the eggs now.
