  1. 1. Carefully cut off the top third of the hard-boiled eggs. Remove the yolks with a small spoon and mix them in a bowl with the crème fraîche and half of the caviar. Season the mixture with a pinch of salt and freshly ground pepper.
  2. 2. Fill the egg whites back with the yolk-caviar mixture. Finally, garnish the stuffed eggs with the remaining caviar and fresh dill sprigs.
