  1. 1. Carefully pit the dates and make a lengthwise slit in them without cutting all the way through.
  2. 2. Roast the walnuts in a pan without added fat until they are fragrant.
  3. 3. Finely chop the roasted walnuts.
  4. 4. Wash the sage leaves and shake them dry.
  5. 5. Finely chop the sage leaves.
  6. 6. Mix the chopped walnuts and sage with the cheese.
  7. 7. Season the cheese and walnut mixture with salt and pepper to taste.
  8. 8. Fill the cheese mixture into the slit dates.
  9. 9. Cut the ham into 12 equal strips.
  10. 10. Wrap each stuffed date with a strip of ham.
  11. 11. Place the dates in a baking dish with the opening facing upwards.
  12. 12. Preheat the oven to 200 degrees (convection is not recommended, gas level 3).
  13. 13. Bake the dates for 12 minutes in the preheated oven.
  14. 14. Wash the salad and spin it dry.
  15. 15. Squeeze the lemon.
  16. 16. Whisk one tablespoon of lemon juice with salt and pepper.
  17. 17. Stir the oil into the dressing mixture.
  18. 18. Toss the salad with the dressing.
  19. 19. Divide the salad onto plates.
  20. 20. Serve the stuffed dates together with the salad.
