Ingredients
- 8 Piquillo chili peppers (fresh or from the can)
- 100 g feta cheese
- 200 g goat cream cheese
- 2 sprigs fresh thyme
- 1 shallot
- 1 clove garlic (optional)
- salt
- freshly ground pepper
- paprika powder (sweet)
- sugar

Instructions
- 1. Wash the chili peppers and remove the inside to hollow them out. Then let them drain well.
- 2. Crumble the feta as finely as possible using a fork and mix it thoroughly with the goat cream cheese.
- 3. Pluck the thyme leaves from the stems, chop them finely, and add them to the cheese mixture.
- 4. Peel the shallot and, if available, one clove of garlic. Cut them into very fine cubes and add them to the cheese. Stir everything well. Season the mixture to taste for a spicy kick and round off the flavor with a little sugar.
- 5. Put the filling into a piping bag and fill the chili peppers evenly with it.
- 6. Arrange the stuffed chili peppers on a plate. Garnish them with fresh thyme and paprika powder.
