🍽️ Avocado Spinach Bread Rolls

Ingredients
- 200 g flesh (of an avocado)
- 2 tbsp lemon juice
- 250 g spinach
- 1 tbsp capers
- 1 tbsp mayonnaise
- 100 g red bell peppers
- 2 slices white sandwich bread
- salt
- pepper
Instructions
- 1. Remove the flesh from the avocado and puree it until smooth.
- 2. Immediately mix in the lemon juice to prevent the avocado from browning.
- 3. Season the avocado mixture with salt and pepper to taste.
- 4. Clean the spinach and wash it thoroughly under running water.
- 5. Put the washed spinach into boiling salted water for two minutes (this is called blanching).
- 6. Remove the spinach from the water and let it drain well in a colander.
- 7. Squeeze the drained spinach firmly to remove any remaining liquid.
- 8. Finely chop the capers.
- 9. Mix the chopped capers with one tablespoon of caper liquid and mayonnaise.
- 10. Clean the bell pepper and wash it.
- 11. Cut the bell pepper into thin strips.
- 12. Remove the hard crust (the rind) from the white bread.
- 13. Spread the avocado mixture evenly over the bread slices.
- 14. Place the pressed spinach on top of the avocado-spread bread slices.
- 15. Distribute the pepper strips in the center of the breads.
- 16. Roll the breads up tightly so they look like small parcels.
- 17. Cut the large rolls in half to create smaller rolls.
- 18. Serve the stuffed bread rolls immediately.
