🍽️ Bärlauch Frikadellen with Mozzarella Filling

Ingredients
- 2 slices whole wheat toast
- 50 g onions (1 onion)
- 50 g wild garlic (1 bunch)
- 500 g ground beef
- 2 eggs
- 2 tsp mustard
- salt
- pepper
- 125 g mozzarella (45% fat in dry matter)
- 2 tbsp olive oil
Instructions
- 1. Cut the toast bread into small cubes.
- 2. Peel the onion and chop it finely.
- 3. Wash the wild garlic and shake it dry.
- 4. Chop the wild garlic finely.
- 5. Put the bread, onion, and wild garlic into a large bowl.
- 6. Add the minced beef, eggs, and mustard.
- 7. Season the mixture with salt and pepper.
- 8. Knead everything thoroughly until a smooth dough forms.
- 9. Shape eight small meatballs from the mixture.
- 10. Cut the mozzarella into eight equal pieces.
- 11. Take one meatball and wrap it with a piece of mozzarella.
- 12. Make sure the filling stays inside.
- 13. Heat the olive oil in a frying pan.
- 14. Fry the meatballs until golden brown on all sides over medium heat.
- 15. This takes about 12 to 15 minutes.
- 16. Serve the meatballs with a fresh tomato salad.
