🍽️ Chicken Salad with Asparagus

Ingredients
- 100 g spring onions (1/2 bunch)
- 200 g cherry tomatoes
- 100 g green asparagus
- 600 g chicken breast fillets (4 chicken breast fillets)
- salt

- 1 small lime
- 1 garlic clove
- 6 tbsp honey
- 1 tbsp grainy mustard (20 g)
- 5 tbsp olive oil (50 ml)
- 100 g watercress
Instructions
- 1. Thoroughly wash the spring onions.
- 2. Slice the spring onions into thin rings.
- 3. Wash the tomatoes.
- 4. Cut the tomatoes into quarters.
- 5. Cut off the woody bottom ends of the asparagus.
- 6. Wash the asparagus.
- 7. Pat the asparagus dry with a kitchen towel.
- 8. Halve the asparagus spears lengthwise.
- 9. Slice the asparagus halves into thin longitudinal slices using a vegetable peeler.
- 10. Wash the chicken fillets.
- 11. Pat the chicken fillets dry with kitchen paper.
- 12. Cut the chicken meat into strips.
- 13. Season the chicken strips with salt and pepper.
- 14. Halve the lime.
- 15. Squeeze the juice from the lime.
- 16. Peel the garlic.
- 17. Dice the garlic finely.
- 18. Mix the garlic with honey and mustard.
- 19. Add three tablespoons of lime juice to the mixture.
- 20. Add three tablespoons of oil to the mixture.
- 21. Season the dressing with salt and pepper.
- 22. Heat the remaining oil in a large non-stick pan.
- 23. Fry the meat over high heat, stirring, for about five minutes.
- 24. Place the chicken meat into a large bowl.
- 25. Add the spring onion rings to the bowl.
- 26. Add the tomato quarters to the bowl.
- 27. Add the asparagus slices to the bowl.
- 28. Toss the salad with the dressing.
- 29. Let the salad marinate for about ten minutes.
- 30. Wash the watercress.
- 31. Shake the watercress dry.
- 32. Pluck the leaves from the stems.
- 33. Chop the leaves roughly if desired.
- 34. Distribute the watercress onto plates or bowls.
- 35. Place the chicken salad with asparagus on the watercress.
- 36. Season the finished salad finally with salt and pepper.
- 37. Serve the salad on the watercress.
