🍽️ Crispy Chicken Meatballs with Fresh Mint Yogurt Dip

Ingredients
- 500 g chicken breast fillet
- 2 slices toast bread
- 2 tbsp yogurt
- 1 clove garlic
- 1 chili pepper
- 1 tbsp chopped coriander leaves
- 1 tsp freshly grated ginger
- 1 pinch turmeric
- 1 egg
- salt
- breadcrumbs
- sunflower oil (for frying)
- 2 flatbreads
- thin cucumber slices (approx. 150 g)
- 400 g yogurt
- 1 tbsp lemon juice
- 1 tbsp freshly chopped mint
- salt
- pepper (from the mill)
Instructions
- 1. Wash the chicken breast fillets thoroughly and pat them dry with a kitchen towel.
- 2. Mince the chicken meat very finely or push it through a meat grinder.
- 3. Crumble the toast bread slices into small pieces.
- 4. Mix the toast crumbs with the yogurt in a large bowl.
- 5. Peel the garlic clove and chop it finely.
- 6. Chop the chili pepper very finely as well.
- 7. Wash the coriander greens and chop them finely.
- 8. Peel the ginger and grate it finely.
- 9. Add the minced chicken meat, the toast-yogurt mixture, the garlic, the chili, the coriander, the ginger, the turmeric powder, and the egg to the bowl.
- 10. Season the mixture with salt.
- 11. Mix all ingredients thoroughly together.
- 12. If the mixture is too soft, add some more white bread crumbs.
- 13. Form about 16 small, equal-sized meatballs from the mixture.
- 14. Heat oil in a large frying pan.
- 15. Fry the meatballs in the hot oil.
- 16. Fry them on each side for about 2 to 3 minutes until golden brown.
- 17. Preheat the oven or use a non-stick frying pan.
- 18. Bake the flatbreads briefly until they are warm and slightly crispy.
- 19. Cut each flatbread into 8 equal pieces.
- 20. Put the yogurt into a small bowl.
- 21. Add lemon juice and the finely chopped mint to the yogurt.
- 22. Mix the dip ingredients well.
- 23. Season the mint sauce with salt and pepper to taste.
- 24. Slice the cucumber into thin rounds.
- 25. Pierce one cucumber slice onto a meatball with a toothpick.
- 26. Place the meatball with the cucumber on a piece of flatbread.
- 27. Serve the meatballs with small bowls of mint-yogurt sauce for dipping.
