🍽️ Chicken Fricassee with Rice

Ingredients
- 250 g Basmati rice
- 500 g chicken breast fillet
- 5 spring onions
- 2 tbsp butter
- 1 tbsp flour
- 250 ml poultry broth
- 100 ml whipping cream
- 2 tbsp freshly chopped parsley
- salt
- lime juice
- cayenne pepper
Instructions
- 1. Cook the rice according to the package instructions.
- 2. Rinse the chicken and pat it dry with a kitchen towel.
- 3. Cut the meat into thin strips.
- 4. Wash the spring onions and trim off the tough ends.
- 5. Slice the spring onions diagonally into thin rings.
- 6. Set aside a few rings of the green part for garnishing.
- 7. Heat 1 tablespoon of butter in a pan.
- 8. Sear the chicken strips over medium heat.
- 9. Remove the meat from the pan and set it aside.
- 10. Sauté the spring onions in the remaining butter.
- 11. Dust the onions with flour.
- 12. Deglaze the mixture with the broth.
- 13. Bring the sauce to a boil.
- 14. Stir in the cream.
- 15. Let the sauce thicken slightly.
- 16. Return the chicken to the sauce.
- 17. Let the meat simmer for 4 to 5 minutes.
- 18. Add the chopped parsley to the pan.
- 19. Season with salt and lime juice.
