  2. 2. Rinse the chicken and pat it dry with a kitchen towel.
  3. 3. Cut the meat into thin strips.
  4. 4. Wash the spring onions and trim off the tough ends.
  5. 5. Slice the spring onions diagonally into thin rings.
  6. 6. Set aside a few rings of the green part for garnishing.
  7. 7. Heat 1 tablespoon of butter in a pan.
  8. 8. Sear the chicken strips over medium heat.
  9. 9. Remove the meat from the pan and set it aside.
  10. 10. Sauté the spring onions in the remaining butter.
  11. 11. Dust the onions with flour.
  12. 12. Deglaze the mixture with the broth.
  13. 13. Bring the sauce to a boil.
  14. 14. Stir in the cream.
  15. 15. Let the sauce thicken slightly.
  16. 16. Return the chicken to the sauce.
  17. 17. Let the meat simmer for 4 to 5 minutes.
  18. 18. Add the chopped parsley to the pan.
  19. 19. Season with salt and lime juice.
