🍽️ Chicken Meatballs in Tomato Sauce

Ingredients
- 500 g chicken breast fillet
- 2 tbsp freshly chopped parsley
- 1 egg
- 0.5 tsp lemon zest (untreated)
- 2 tbsp white bread crumbs
- salt
- pepper
- nutmeg (freshly grated)
- 1 onion
- 1 garlic clove
- 2 tbsp olive oil
- 1 tsp tomato paste
- 100 ml red wine
- 350 g chunky tomatoes
- 2 tbsp freshly chopped herbs (thyme and rosemary)
Instructions
- 1. Rinse the chicken meat under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Grind the meat using the fine blade of the meat grinder.
- 4. Place the minced meat into a large bowl.
- 5. Add the parsley, the egg, the lemon zest, and the breadcrumbs.
- 6. Mix all ingredients well until a moldable mass forms.
- 7. Season the mixture with salt, pepper, and nutmeg.
- 8. Form small balls from the meat mixture.
- 9. Peel the onion and the garlic.
- 10. Dice the onion and the garlic finely.
- 11. Heat the oil in a pan.
- 12. Sauté the onions and garlic in the hot oil until translucent.
- 13. Stir in the tomato paste and sauté it briefly.
- 14. Deglaze the mixture with the wine.
- 15. Add the tomatoes to the sauce.
- 16. Let the sauce simmer for about 15 minutes until it becomes thick.
- 17. Bring water to a boil in a pot and add salt.
- 18. Add the meatballs to the boiling salted water.
- 19. Reduce the heat so that the water simmers gently.
- 20. Let the balls cook for about 10 minutes.
- 21. Sprinkle the herbs into the tomato sauce.
- 22. Season the sauce with salt and pepper to taste.
- 23. Serve the sauce onto the plates.
- 24. Drain the cooked meatballs.
- 25. Place the meatballs on the sauce and serve the dish.
