🍽️ Chicken Vegetable Burgers

Ingredients
- 1 small zucchini
- salt
- 1 carrot
- 1 spring onion
- 2 chicken breast fillets (approx. 120 g each)
- 1 egg
- 2 tbsp breadcrumbs
- pepper
- 1 tbsp vegetable oil
- 1 handful leaf lettuce (e.g. oak leaf)
- 1 avocado
- 2 tomatoes
- 4 whole grain rolls (with sesame)
- 4 tbsp ketchup
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Trim the ends of the zucchini.
- 3. Grate the zucchini finely.
- 4. Sprinkle the grated zucchini with salt.
- 5. Let the zucchini sit for ten minutes to release water.
- 6. Pat the zucchini dry with a kitchen towel.
- 7. Peel the carrot.
- 8. Grate the carrot finely as well.
- 9. Wash the spring onions.
- 10. Trim the dry ends of the spring onions.
- 11. Slice the spring onions into thin rings.
- 12. Wash the chicken breast fillets.
- 13. Pat the chicken breast fillets dry.
- 14. Pass the chicken through a meat grinder or chop it very finely.
- 15. Mix the meat with the egg.
- 16. Add the spring onions to the meat mixture.
- 17. Add the zucchini to the meat mixture.
- 18. Add the carrot to the meat mixture.
- 19. Add enough breadcrumbs until the mixture can be shaped well.
- 20. Season the mixture with salt and pepper.
- 21. Form four burger patties from the mixture.
- 22. Heat oil in a non-stick pan.
- 23. Fry the burger patties in the hot pan for five to six minutes on each side until golden brown.
- 24. Rinse the salad.
- 25. Remove any damaged leaves from the salad.
- 26. Shake the salad dry.
- 27. Peel the avocado.
- 28. Halve the avocado.
- 29. Remove the pit of the avocado.
- 30. Slice the flesh of the avocado into wedges.
- 31. Wash the tomatoes.
- 32. Cut out the hard stem area from the tomatoes.
- 33. Slice the tomatoes.
- 34. Slice the buns horizontally.
- 35. Toast the cut sides of the buns briefly.
- 36. Top the buns with the salad.
- 37. Top the buns with the avocado.
- 38. Top the buns with the tomato slices.
- 39. Top the buns with the chicken patties.
- 40. Add one tablespoon of ketchup to each burger.
- 41. Close the burgers with the top bun.
- 42. Serve the burgers immediately.
