🍲 Refreshing Melon Cucumber Ice Soup

Ingredients
- 700 g cucumber
- 1 kg melon (Galia)
- 3 spring onions
- 0.5 bunch cilantro
- 1 lemon
- 500 ml kefir
- salt
- pepper
- 1 red chili pepper
- 0.5 bunch chives
- 180 g North Sea shrimp (peeled)
Instructions
- 1. Wash the cucumbers thoroughly.
- 2. Peel the cucumbers completely.
- 3. Cut the cucumbers in half lengthwise.
- 4. Remove the seeds from the cucumber halves using a spoon.
- 5. Cut the deseeded cucumbers into coarse chunks.
- 6. Cut the melon in half.
- 7. Remove the seeds from the melon.
- 8. Use a melon baller to scoop balls from half of the melon flesh.
- 9. Store the melon balls covered in the refrigerator.
- 10. Scrape out the remaining melon flesh with a spoon.
- 11. Wash the spring onions.
- 12. Remove the tough ends of the spring onions.
- 13. Cut the spring onions into coarse pieces.
- 14. Wash the coriander leaves.
- 15. Shake the coriander leaves dry.
- 16. Chop the coriander leaves coarsely.
- 17. Squeeze the lemon.
- 18. Place the cucumber chunks into a mixing container.
- 19. Add the spring onion pieces to the mixing container.
- 20. Add the scraped melon flesh to the mixing container.
- 21. Add the chopped coriander leaves to the mixing container.
- 22. Add two tablespoons of lemon juice.
- 23. Add the kefir.
- 24. Season the mixture with salt.
- 25. Season the mixture with pepper.
- 26. Blend everything finely with a hand blender.
- 27. Cut the chili pepper in half lengthwise.
- 28. Remove the seeds from the chili pepper.
- 29. Wash the deseeded chili pepper.
- 30. Dice the chili pepper very finely.
- 31. Add the chili pepper cubes to the soup.
- 32. Place the soup in the freezer compartment for about 45 minutes.
- 33. Stir the soup several times while it freezes.
- 34. Wash the chives.
- 35. Shake the chives dry.
- 36. Cut the chives into two-centimeter-long pieces.
- 37. Pour the cold soup into pre-chilled bowls.
- 38. Distribute the crab meat over the soup.
- 39. Distribute the melon balls over the soup.
- 40. Sprinkle the chives over the soup.
