  1. 1. Thoroughly wash the fresh spinach under running water.
  2. 2. Remove any thick stems or wilted leaves from the spinach.
  3. 3. Dry the spinach thoroughly, for example using a salad spinner.
  4. 4. Peel the shallots and the garlic.
  5. 5. Finely chop the shallots and the garlic.
  6. 6. Heat the oil in a large pan.
  7. 7. Sauté the shallots and garlic over medium heat until they are soft and translucent.
  8. 8. Add the dry spinach to the pan.
  9. 9. Reduce the heat to low and cover the pan.
  10. 10. Let the spinach simmer until it has completely wilted.
  11. 11. Season the spinach with salt, pepper, and freshly grated nutmeg.
  12. 12. Finely grate the Parmesan cheese.
  13. 13. Mix the soy cream with the sautéed spinach.
  14. 14. Add half of the grated Parmesan to the spinach mixture and stir it in.
  15. 15. Divide the spinach mixture evenly among four small baking dishes.
  16. 16. Use a spoon or a small glass to press a well into the center of each portion.
  17. 17. Crack an egg into each well.
  18. 18. Sprinkle the remaining Parmesan cheese over the dishes.
  19. 19. Preheat the oven to 200 °C (180 °C for fan-assisted or gas mark 3).
  20. 20. Place the baking dishes in the preheated oven.
  21. 21. Bake the dishes for 10 to 15 minutes until the egg whites are set.
  22. 22. Remove the dishes from the oven.
  23. 23. Finally, adjust the seasoning of the dish with salt and pepper to taste.
