🍽️ Baked Spinach with Egg

Ingredients
- 800 g spinach leaves
- 2 shallots
- 1 clove of garlic
- 1 tbsp olive oil
- salt
- pepper (from the mill)
- nutmeg
- 40 g parmesan (1 piece)
- 100 ml soy cream
- 4 eggs
Instructions
- 1. Thoroughly wash the fresh spinach under running water.
- 2. Remove any thick stems or wilted leaves from the spinach.
- 3. Dry the spinach thoroughly, for example using a salad spinner.
- 4. Peel the shallots and the garlic.
- 5. Finely chop the shallots and the garlic.
- 6. Heat the oil in a large pan.
- 7. Sauté the shallots and garlic over medium heat until they are soft and translucent.
- 8. Add the dry spinach to the pan.
- 9. Reduce the heat to low and cover the pan.
- 10. Let the spinach simmer until it has completely wilted.
- 11. Season the spinach with salt, pepper, and freshly grated nutmeg.
- 12. Finely grate the Parmesan cheese.
- 13. Mix the soy cream with the sautéed spinach.
- 14. Add half of the grated Parmesan to the spinach mixture and stir it in.
- 15. Divide the spinach mixture evenly among four small baking dishes.
- 16. Use a spoon or a small glass to press a well into the center of each portion.
- 17. Crack an egg into each well.
- 18. Sprinkle the remaining Parmesan cheese over the dishes.
- 19. Preheat the oven to 200 °C (180 °C for fan-assisted or gas mark 3).
- 20. Place the baking dishes in the preheated oven.
- 21. Bake the dishes for 10 to 15 minutes until the egg whites are set.
- 22. Remove the dishes from the oven.
- 23. Finally, adjust the seasoning of the dish with salt and pepper to taste.
