  1. 1. Wash the spring onions thoroughly. Remove the dry ends. Slice the onions into thin rings.
  2. 2. Peel the ginger root. Slice it into thin rounds. Cut the rounds into very fine strips.
  3. 3. Drizzle lemon juice over the salmon pieces. Season the fish with salt and pepper to taste.
  4. 4. Wash the spinach thoroughly. Remove thick stems and wilted leaves. Bring a large pot of salted water to a boil. Add the spinach. Cook it for 1 minute. The volume of the spinach will reduce significantly.
  5. 5. Drain the spinach. Rinse it immediately with cold water to stop the cooking process. Let the water drain off. Squeeze the spinach firmly to remove excess moisture. Loosen it up afterwards.
  6. 6. Heat 2 tablespoons of butter in a large pan. Add the spring onion rings, star anise, and ginger strips. Sauté the aromatics for 2 minutes.
  7. 7. Pour the fish stock into the pan. Bring the mixture to a boil.
  8. 8. Reduce the heat to a low level. Place the salmon pieces into the pan. Cover the pan. Steam the fish for 3 minutes.
  9. 9. Gently turn the salmon pieces. Steam them for another 2 minutes under the lid.
  10. 10. Heat the remaining butter in a separate pan. Add the prepared spinach. Sauté the spinach while stirring occasionally. Cook it until all the liquid has evaporated.
  11. 11. Season the spinach with salt and pepper. Remove the pan from the heat.
  12. 12. Arrange the spinach on the plates. Place the salmon pieces on top.
  13. 13. Drizzle some of the cooking liquid from the fish pan over the salmon. Garnish the fish with the ginger strips and spring onion rings.
  14. 14. Sprinkle sesame seeds over the spinach. Serve the dish immediately.
