🍽️ Tender Cod on Radish Bed with Green Pesto

Ingredients
- 125 g Radish (1 piece)
- Sea salt
- 5 g dried Kombu seaweed
- 1 bunch Coriander
- 1 Clove of garlic
- 25 g Macadamia nuts
- 2 tbsp Pumpkin seeds
- 0.5 Lime
- 5 tbsp Rapeseed oil
- Pepper
- 30 g Ginger (1 piece)
- 200 ml White wine (or light broth)
- 2 Lime leaves
- 280 g Cod fillet (2 Cod fillets)
- 1 tsp black sesame seeds
Instructions
- 1. Peel the radish.
- 2. Shred the radish into thin strips using a vegetable peeler.
- 3. Lightly salt the radish strips.
- 4. Let the radish sit for 15 minutes.
- 5. Rinse the seaweed under cold water.
- 6. Soak the seaweed in cold water for 10 minutes.
- 7. Wash the coriander leaves.
- 8. Shake the coriander dry.
- 9. Pluck the coriander leaves from the stems.
- 10. Peel the garlic.
- 11. Roughly chop the garlic.
- 12. Roughly chop the macadamia nuts.
- 13. Toast the macadamia nuts until light brown.
- 14. Lightly toast the pumpkin seeds.
- 15. Lift the seaweed out of the water.
- 16. Rinse the seaweed under cold water.
- 17. Squeeze the lime.
- 18. Place the seaweed in a tall container.
- 19. Add the coriander leaves.
- 20. Add the chopped garlic.
- 21. Add the toasted pumpkin seeds.
- 22. Add the toasted macadamia nuts.
- 23. Add 2 teaspoons of lime juice.
- 24. Purée the mixture using a hand blender.
- 25. Drizzle in rapeseed oil in a thin stream.
- 26. Blend everything well.
- 27. Let the pesto sit for 10 minutes.
- 28. Season the pesto with salt.
- 29. Season the pesto with pepper.
- 30. Peel the ginger.
- 31. Slice the ginger.
- 32. Pour the white wine into a pan.
- 33. Add the ginger slices to the pan.
- 34. Add the lime leaves to the pan.
- 35. Bring the liquid in the pan to a boil.
- 36. Rinse the cod.
- 37. Place the cod in the seasoned wine.
- 38. Simmer the cod over medium heat.
- 39. Cover the pan.
- 40. Simmer the cod for 8 minutes.
- 41. Squeeze the radish.
- 42. Arrange the radish as a bed on two plates.
- 43. Place the fish on top of the radish bed.
- 44. Sprinkle everything with black sesame seeds.
- 45. Place small dollops of pesto around the edge as garnish.
- 46. Add a few coriander stems.
