🍰 Stewed Pears with Cheese

Ingredients
- 4 pears
- 3 tsp lemon juice
- 1 chili pepper
- 2 sprigs rosemary
- 1 tbsp olive oil
- 4 tsp honey
- pepper (from the mill)
- 2 small pomegranates
- 2 tbsp walnut kernels
- 200 g Brie
Instructions
- 1. Wash the chili pepper, cut it in half, remove the seeds, and finely chop the flesh. Pluck the small needles off the rosemary sprig.
- 2. Peel the pears, cut them in half, remove the core, and slice them into wedges. Drizzle with some lemon juice.
- 3. Heat the oil in the pan. Fry the pear wedges, chili pieces, and rosemary in it for 1 minute. Then deglaze with 2 tablespoons of water and simmer for another 2 minutes. Season with honey and pepper.
- 4. Roughly chop the nuts. Roll the pomegranates flat with your hand over the work surface to break them open, and remove the seeds. Mix the nuts and pomegranate seeds into the pears, simmer everything for another 1 to 2 minutes, adjust seasoning, and let it cool down.
- 5. Slice the Brie cheese and serve it together with the pear compote.
