  1. 1. Do not preheat the oven yet. Start with the dough. Put flour, 2 tablespoons of honey, one egg, and cold butter (cut into small cubes) into a bowl. Quickly knead the ingredients into a smooth dough. Divide the dough into two unequal parts: a large one (two-thirds) and a small one (one-third). Shape both parts into balls. Place the dough balls in a bowl, cover them, and put them in the refrigerator for 1 hour.
  2. 2. While the dough rests, prepare the apples. Peel the apples, cut them into eighths, and remove the core. Cut the apple wedges crosswise into thin slices. Immediately drizzle the apple slices with 3 tablespoons of lemon juice to prevent browning. Add raisins, 2 tablespoons of honey, and cinnamon. Mix everything well. Line the bottom of a springform pan with baking paper. Grease the side of the pan with a little butter if needed. Take the large dough portion out of the refrigerator. Roll it out on a floured work surface. Press the dough into the springform pan, creating a 4 cm high edge. Prick th

Press the edges of the lid firmly against the edges of the base to seal them. Poke a few small holes in the lid to allow steam to escape. Bake the pie in the preheated oven at 200 °C (convection: 180 °C; gas: setting 3–4) for approx. 45 minutes. Remove the pie from the oven and let it cool completely.
