🍽️ Fish and Vegetable Parchment Packets

Ingredients
- 1 red bell pepper
- 1 yellow bell pepper
- 2 shallots
- 1 clove of garlic
- 3 tbsp olive oil
- salt
- pepper
- 4 fish fillets (approx. 180 g each, e.g. cod)
- 80 g pitted olives (black and green)

Instructions
- 1. Wash the peppers thoroughly.
- 2. Halve the peppers and remove the seeds.
- 3. Cut the peppers into thin strips.
- 4. Peel the shallots.
- 5. Halve the shallots lengthwise.
- 6. Slice the shallots into thin strips.
- 7. Peel the garlic.
- 8. Slice the garlic into thin rounds.
- 9. Heat one tablespoon of oil in a pan.
- 10. Add the shallots, garlic, and peppers to the pan.
- 11. Sauté the vegetables briefly.
- 12. Season the vegetables with salt and pepper.
- 13. Remove the pan from the heat.
- 14. Lay out four rectangular sheets of parchment paper side by side.
- 15. Brush the center of each paper with a little olive oil.
- 16. Rinse the fish fillets under cold water.
- 17. Pat the fish dry with a kitchen towel.
- 18. Season the fish with salt and pepper.
- 19. Place the fish fillets in the center of the oiled papers.
- 20. Distribute the sautéed vegetables over the fish.
- 21. Slice the olives.
- 22. Place the olive slices on top of the vegetables.
- 23. Halve a lemon.
- 24. Squeeze the juice of the half lemon over the packets.
- 25. Drizzle one teaspoon of olive oil onto each packet.
- 26. Fold the parchment paper over the vegetables.
- 27. Seal the ends of the packets securely.
- 28. Place the packets on a baking sheet.
- 29. Preheat the oven to 220 degrees Celsius.
- 30. Bake the packets for 15 to 20 minutes.
