  5. 5. Halve the shallots lengthwise.
  6. 6. Slice the shallots into thin strips.
  7. 7. Peel the garlic.
  8. 8. Slice the garlic into thin rounds.
  9. 9. Heat one tablespoon of oil in a pan.
  10. 10. Add the shallots, garlic, and peppers to the pan.
  11. 11. Sauté the vegetables briefly.
  12. 12. Season the vegetables with salt and pepper.
  13. 13. Remove the pan from the heat.
  14. 14. Lay out four rectangular sheets of parchment paper side by side.
  15. 15. Brush the center of each paper with a little olive oil.
  16. 16. Rinse the fish fillets under cold water.
  17. 17. Pat the fish dry with a kitchen towel.

  19. 19. Place the fish fillets in the center of the oiled papers.
