  1. 1. Thoroughly wash the white asparagus.
  2. 2. Peel the white asparagus completely and trim off the woody ends.
  3. 3. Wash the green asparagus.
  4. 4. Peel only the bottom third of the green asparagus.
  5. 5. Trim the ends of the green asparagus as well.
  6. 6. Place the prepared asparagus into a steamer insert.
  7. 7. Lightly sprinkle the asparagus with salt.
  8. 8. Fill a large pot one-quarter full with water.
  9. 9. Add the mixed herbs to the water.
  10. 10. Bring the water with the herbs to a boil.
  11. 11. Let the herbs simmer for about 10 minutes.
  12. 12. Place the steamer insert with the asparagus into the pot.
  13. 13. Cover the pot.
  14. 14. Steam the asparagus for about 15 minutes.
  15. 15. Place the potatoes in plenty of boiling water.
  16. 16. Cook the potatoes until tender in 20 to 25 minutes.
  17. 17. Score a cross into the bottom of the tomatoes.
  18. 18. Pour hot water over the tomatoes.
  19. 19. Peel the skin off the tomatoes.
  20. 20. Remove the seeds from the tomatoes.
  21. 21. Dice the tomatoes into small pieces.
  22. 22. Finely chop the peeled shallots.
  23. 23. Whisk olive oil, balsamic vinegar, salt, and pepper together in a bowl.
  24. 24. Fold the diced tomatoes into the oil mixture.
  25. 25. Fold the chopped shallots into the tomato mixture.
  26. 26. Whisk the yogurt with the lemon juice.
  27. 27. Press the garlic through and add it to the yogurt.
  28. 28. Whisk the mixture well.
  29. 29. Fold the chopped parsley into the yogurt dip.
  30. 30. Season the dip with salt and pepper to taste.
  31. 31. Arrange the steamed asparagus on a large platter.
  32. 32. Serve the boiled potatoes alongside.

  34. 34. Serve the tomato salsa alongside.
