🍽️ Steamed Asparagus with Herb Yogurt and Fresh Tomato Dip

Ingredients
- 1 kg green asparagus
- 500 g white asparagus
- salt
- 1 bunch mixed herbs
- 3 large tomatoes
- 2 shallots
- 6 tbsp olive oil
- 4 tbsp balsamic vinegar
- salt
- white pepper (from the mill)
- 250 g yogurt
- 2 tbsp lemon juice
- 3 garlic cloves
- 1 bunch flat-leaf parsley
- 600 g boiled potatoes
Instructions
- 1. Thoroughly wash the white asparagus.
- 2. Peel the white asparagus completely and trim off the woody ends.
- 3. Wash the green asparagus.
- 4. Peel only the bottom third of the green asparagus.
- 5. Trim the ends of the green asparagus as well.
- 6. Place the prepared asparagus into a steamer insert.
- 7. Lightly sprinkle the asparagus with salt.
- 8. Fill a large pot one-quarter full with water.
- 9. Add the mixed herbs to the water.
- 10. Bring the water with the herbs to a boil.
- 11. Let the herbs simmer for about 10 minutes.
- 12. Place the steamer insert with the asparagus into the pot.
- 13. Cover the pot.
- 14. Steam the asparagus for about 15 minutes.
- 15. Place the potatoes in plenty of boiling water.
- 16. Cook the potatoes until tender in 20 to 25 minutes.
- 17. Score a cross into the bottom of the tomatoes.
- 18. Pour hot water over the tomatoes.
- 19. Peel the skin off the tomatoes.
- 20. Remove the seeds from the tomatoes.
- 21. Dice the tomatoes into small pieces.
- 22. Finely chop the peeled shallots.
- 23. Whisk olive oil, balsamic vinegar, salt, and pepper together in a bowl.
- 24. Fold the diced tomatoes into the oil mixture.
- 25. Fold the chopped shallots into the tomato mixture.
- 26. Whisk the yogurt with the lemon juice.
- 27. Press the garlic through and add it to the yogurt.
- 28. Whisk the mixture well.
- 29. Fold the chopped parsley into the yogurt dip.
- 30. Season the dip with salt and pepper to taste.
- 31. Arrange the steamed asparagus on a large platter.
- 32. Serve the boiled potatoes alongside.
- 33. Serve the herb yogurt dip alongside.
- 34. Serve the tomato salsa alongside.
