  1. 1. Carefully cut the silken tofu into 8 equal cubes.
  2. 2. Place the tofu cubes on a flat plate.
  3. 3. Squeeze the lemon and mix 2 tablespoons of lemon juice with 2 tablespoons of mirin (sweet rice wine) and 2 tablespoons of soy sauce.
  4. 4. Pour the marinade evenly over the tofu.
  5. 5. Cover the plate and let the tofu marinate for 30 minutes.
  6. 6. Gently turn the tofu once during the marinating time.
  7. 7. Bring 1 liter of salted water to a boil in a pot.
  8. 8. Clean the spring onions and wash them thoroughly.
  9. 9. Slice the spring onions diagonally into thin rings.
  10. 10. Peel the ginger and slice it into thin rounds.
  11. 11. Distribute the ginger slices and half of the spring onion rings over the marinated tofu.
  12. 12. Place the plate in a steamer insert and hang it over the boiling salted water.
  13. 13. Cover the steamer and steam the tofu for 5 minutes.
  14. 14. Dissolve the dashi broth (Japanese base broth) in 3 tablespoons of water.
  15. 15. Stir in the remaining mirin and soy sauce into the broth.
  16. 16. Drizzle the hot tofu with the finished sauce.
  17. 17. Garnish the tofu with the remaining spring onion rings.
  18. 18. Season the dish freshly with black pepper.
  19. 19. Serve the tofu immediately while warm.
