🍽️ Tender Steamed Silken Tofu with Ginger and Dashi

Ingredients
- 300 g Silken Tofu
- 0.5 Lemon
- 3 tbsp Mirin
- 3 tbsp Soy Sauce
- Salt
- 4 Spring Onions
- 30 g Ginger (1 Piece)
- 3 tbsp Dashi Broth
- Pepper
Instructions
- 1. Carefully cut the silken tofu into 8 equal cubes.
- 2. Place the tofu cubes on a flat plate.
- 3. Squeeze the lemon and mix 2 tablespoons of lemon juice with 2 tablespoons of mirin (sweet rice wine) and 2 tablespoons of soy sauce.
- 4. Pour the marinade evenly over the tofu.
- 5. Cover the plate and let the tofu marinate for 30 minutes.
- 6. Gently turn the tofu once during the marinating time.
- 7. Bring 1 liter of salted water to a boil in a pot.
- 8. Clean the spring onions and wash them thoroughly.
- 9. Slice the spring onions diagonally into thin rings.
- 10. Peel the ginger and slice it into thin rounds.
- 11. Distribute the ginger slices and half of the spring onion rings over the marinated tofu.
- 12. Place the plate in a steamer insert and hang it over the boiling salted water.
- 13. Cover the steamer and steam the tofu for 5 minutes.
- 14. Dissolve the dashi broth (Japanese base broth) in 3 tablespoons of water.
- 15. Stir in the remaining mirin and soy sauce into the broth.
- 16. Drizzle the hot tofu with the finished sauce.
- 17. Garnish the tofu with the remaining spring onion rings.
- 18. Season the dish freshly with black pepper.
- 19. Serve the tofu immediately while warm.
