🍽️ Steamed Red Snapper with Ginger-Orange Dressing

Ingredients
- 10 g ginger (1 piece)
- 1 organic orange
- 900 g Red Snapper (1 Red Snapper; ready for cooking)
- 4 spring onions
- 1 garlic clove
- 4 tbsp soy sauce
- 1 tsp raw cane sugar
- 2 tbsp rapeseed oil
- 1 tbsp sesame oil
Instructions
- 1. Peel the ginger.
- 2. Finely chop the ginger.
- 3. Rinse the orange under hot water.
- 4. Dry the orange.
- 5. Thinly peel the orange zest using a vegetable peeler.
- 6. Cut the orange zest into very fine strips.
- 7. Cut the orange in half.
- 8. Squeeze the juice from the orange.
- 9. Wash the fish inside and out under cold running water.
- 10. Pat the fish dry thoroughly.
- 11. Lightly score the fish skin with a sharp knife.
- 12. Place two sheets of aluminum foil (each 50 x 30 cm) on top of each other.
- 13. Fold up the edges of the foil to create a long basket shape.
- 14. Place the fish in the center of the foil basket.
- 15. Distribute the orange juice over the fish.
- 16. Distribute the orange zest over the fish.
- 17. Distribute half of the chopped ginger over the fish.
- 18. Place the fish in a steamer insert.
- 19. Place the steamer insert over boiling water.
- 20. Steam the fish for 15 to 20 minutes.
- 21. Meanwhile, clean the spring onions.
- 22. Wash the spring onions.
- 23. Cut the spring onions into thin strips.
- 24. Peel the garlic.
- 25. Finely chop the garlic.
- 26. Put the spring onions into a bowl.
- 27. Add the garlic to the bowl.
- 28. Add the remaining ginger to the bowl.
- 29. Stir the soy sauce into the bowl.
- 30. Stir the sugar into the bowl.
- 31. Remove the fish from the steamer.
- 32. Place the fish on a serving plate or a large platter.
- 33. Drizzle the fish with the ginger-onion mixture.
- 34. Add rapeseed oil and sesame oil to a small saucepan.
- 35. Heat the oils very strongly.
- 36. Pour the hot oil over the fish.
- 37. Serve the fish immediately.
