  8. 8. Squeeze the juice from the orange.
  9. 9. Wash the fish inside and out under cold running water.
  10. 10. Pat the fish dry thoroughly.
  11. 11. Lightly score the fish skin with a sharp knife.
  12. 12. Place two sheets of aluminum foil (each 50 x 30 cm) on top of each other.
  13. 13. Fold up the edges of the foil to create a long basket shape.
  14. 14. Place the fish in the center of the foil basket.
  15. 15. Distribute the orange juice over the fish.
  16. 16. Distribute the orange zest over the fish.
  17. 17. Distribute half of the chopped ginger over the fish.
  18. 18. Place the fish in a steamer insert.
  19. 19. Place the steamer insert over boiling water.
  20. 20. Steam the fish for 15 to 20 minutes.

  34. 34. Add rapeseed oil and sesame oil to a small saucepan.
  35. 35. Heat the oils very strongly.
  36. 36. Pour the hot oil over the fish.
