🍽️ Steamed Salmon in Herb Packets with Snow Peas

Ingredients
- 600 g salmon fillet (kitchen-ready, skinless)
- 2 stalks lemongrass
- 1 red chili pepper
- 3 spring onions
- 2.5 cm fresh ginger
- 0.5 untreated lime (juice)
- 3 tbsp soybean oil
- 1 clove garlic
- salt
- pepper (from the mill)
- 400 g snow peas
Instructions
- 1. Rinse the salmon under cold water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Cut the salmon into four equal portions.
- 4. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 5. Cut four squares from parchment paper, each measuring 24 by 24 centimeters.
- 6. Wash the lemongrass and remove the outer, tough leaves.
- 7. Cut the lemongrass into pieces about one centimeter wide.
- 8. Wash the chili and cut it in half lengthwise.
- 9. Remove the seeds from the chili.
- 10. Cut the chili into fine strips.
- 11. Rinse the spring onions and remove the dry ends.
- 12. Slice the spring onions into thin rings.
- 13. Peel the ginger.
- 14. Cut the ginger into fine matchsticks.
- 15. Mix the spring onions, chili, lemongrass, lime juice, and oil in a bowl.
- 16. Peel the garlic cloves.
- 17. Press the garlic directly into the herb mixture.
- 18. Stir the garlic in well.
- 19. Place one piece of salmon on a parchment paper square.
- 20. Season the salmon with salt and pepper.
- 21. Cover the fish with the lemongrass mixture.
- 22. Fold the parchment paper around the fish to form a packet.
- 23. Rinse the snow peas under running water.
- 24. Remove the tough stems and strings from the snow peas.
- 25. Bring vegetable broth to a boil in a pot.
- 26. Steam the snow peas over the boiling steam until cooked.
- 27. Place the salmon packets on the plates.
- 28. Carefully open the packets.
- 29. Serve the salmon together with the steamed snow peas.
