  1. 1. Wash the celery thoroughly and slice it into thin rounds.
  2. 2. Peel the carrots and cut them into long sticks.
  3. 3. Wash the apple and cut it into quarters.
  4. 4. Remove the core from the apple quarters.
  5. 5. Slice off two wedges from the apple.
  6. 6. Drizzle these two wedges with a little lemon juice.
  7. 7. Cut the remaining apple into sticks.
  8. 8. Add the apple sticks to the remaining lemon juice.
  9. 9. Wash the spring onions and slice them into thin rings.
  10. 10. Place all the vegetables (except the apple) into a steamer insert.
  11. 11. Place the steamer insert over a saucepan with water.
  12. 12. Rinse the salmon fillet under running water.
  13. 13. Pat the salmon dry with a kitchen towel.
  14. 14. Drizzle the salmon with one teaspoon of lemon juice.
  15. 15. Season the salmon lightly with salt.
  16. 16. Place the salmon on top of the vegetables in the steamer.
  17. 17. Pour about half a liter of water into the pot under the steamer.
  18. 18. Wash the parsley and shake off excess water.
  19. 19. Finely chop one stalk of parsley.
  20. 20. Carefully lift the cooked salmon from the vegetables using two spatulas.
  21. 21. Mix the apple and the chopped parsley into the steamed vegetables.
  22. 22. Arrange the vegetables on pre-warmed plates.
  23. 23. Add the remaining lemon juice, horseradish, and oil.
  24. 24. Serve the steamed salmon with the vegetables.
  25. 25. Garnish the dish with the apple wedge and parsley.
