🍽️ Steamed Cod with Creamy Mustard Sauce

Ingredients
- 300 g Cod fillet (scaled, with center bone, 2 Cod fillets)
- Salt
- white pepper
- 1 tbsp Oil
- 50 ml White wine
- 2 Egg yolks
- 2 tbsp Tarragon mustard
- 1 tbsp Whipping cream (or soy cream for cooking and thickening)
Instructions
- 1. Rinse the cod under running water.
- 2. Carefully remove any blood residue from the bones.
- 3. Fill a pot with about four centimeters of water.
- 4. Bring the water to a boil.
- 5. Season the fish with salt and pepper on all sides.
- 6. Brush the bottom of a steamer insert or steamer basket with oil.
- 7. Place the fish into the prepared basket.
- 8. Place the basket into the pot over the boiling water.
- 9. Place the lid on the pot.
- 10. Steam the fish on high heat for 8 to 10 minutes.
- 11. Turn the fish over after 5 minutes.
- 12. Check for doneness: The center bone should pull out easily.
- 13. The skin should now peel off easily.
- 14. Fill a mixing bowl with some hot water.
- 15. Place the bowl over the hot water (bain-marie).
- 16. Add white wine, egg yolk, and mustard to the bowl.
- 17. Whisk the mixture vigorously with a large whisk until creamy.
- 18. Let the mixture whip for about 5 minutes.
- 19. Stir the cream into the sauce.
- 20. Season the sauce with salt and pepper to taste.
- 21. Place the cooked fish on a plate.
- 22. Serve the fish with the mustard cream sauce.
- 23. Serve dill potatoes as a side dish.
